Cilantro & Parsley “Impesto”

These ingredients pack a powerful punch of phytonutrients, polyphenols, flavonoids & vitamins!

  • 1 cup organic fresh cilantro, densely packed

  • 1 cup organic fresh Italian (flat) parsley, densely packed

  • 3-4 garlic cloves, smashed (use more if you love garlic!)

  • 1/4 cup fresh lemon juice

  • Zest of 1 organic lemon

  • 1/3 cup unfiltered, organic EVOO

  • Celtic sea salt, black & cayenne pepper to taste

Optional heat: add fresh grated ginger (another great anticancer food!) or a Serrano or jalapeño pepper (seeds removed if you don’t like too much heat) for more zing!

Optional creamy version: if using the sauce right away, you can add 1/2 an avocado but it won’t store as well

Blend all ingredients in a food processor or blender until well combined.

Drizzle on salads, your favorite bowl meal, on top of avocado toast, salmon, eggs, or anything else you like!
