Red Cabbage Slaw

RED CABBAGE SLAW 

(for fish tacos or just a fresh crunchy side)

½ head of organic red cabbage, hand sliced thinly

½ jicama root ball, peeled & shredded w/ box grater

3-4 carrots shredded on box grater

2 apples, shredded w/ box grater

½ bunch fresh cilantro, diced

Dressing:

2 organic limes, zested and juiced (always zest first!)

2-3 tbs best quality extra virgin olive oil 

Splash of maple syrup (skip if avoiding sugar)

Salt & white pepper 

Blend dressing well with whisk before tossing into cabbage mix.  Tastes better after refrigerating 2 hours and keeps well for 3 days in the refrigerator.
